Veggie Spring Rolls with Savory Peanut Sauce

i didn’t measure anything for these, as it depends on how many you’re looking to make! i thinly sliced carrots and peeled cucumbers, diced some avo, and had some shredded red cabbage on hand. i used brown rice paper spring roll wrappers and followed the package instructions for preparation! i had to quickly dip the wrapper in a bowl of warm water, then place right away on a paper towel. i loaded up each wrap with a combo of the above ingredients and rolled them up, that’s it!

savory peanut sauce:

for this i also dind’t measure (sensing a trend here lol). a few spoonfuls of peanut butter, some sea salt, garlic powder, about 1 tbsp coconut aminos (can use soy sauce, it’s the same thing flavor wise), splash of lemon juice, whisked until smooth!
