set oven to 350 and grease a loaf pan. in a box mix the following:
* 1 1/2 cups oat flour
* 1/3 cup coconut sugar
* pinch of baking powder
* pinch of sea salt
* pinch of cinnamon
mix the following in a separate bowl, then add the wet mixture to the dry:
* 1/3 cup warm water
* 1/3 cup olive oil
* 1/3 cup maple syrup
* splash vanilla extract
once a smooth, uniform batter forms, pour into loaf pan and bake until golden brown, about 35-40 minutes. let cool completely before icing. for the icing:
– 1 single serve container (5.3 oz) of plain non-dairy yogurt
– 2 tbsp maple syrup
– 1 tbsp maca powder
– pinch of cinnamon
stir until thoroughly well combined, then place in the freezer for a few minutes to thicken up. spread over completely cooled loaf!
