Peanut Butter Curry Bowl

steamed broccoli, roasted curry carrots and onions, white basmati rice (my faveeeee), sautéed kale, peanut butter curry sauce

 

1/2 cup soaked and drained cashews, 2 tbsp peanut butter, 2 tbsp yellow curry paste, 2 tbsp coconut aminos, curry powder, sea salt, ground ginger, ground cumin, 2 tbsp honey, 1/2 cup warm water, splash of lime juice. blend until creamy. made two servings for me)!
