No-Bake Thin Mint Brownie Bars

– 1/4 cup chopped cashews
– 1/3 cup cooked quinoa
– 1 flax egg (2 tbsp ground flax mixed with 5 tbsp water, mix and sit until thick)
– 2 tbsp melted and cooled coconut oil
– 1/4 cup maple syrup
– 1/2 cup almond flour
– 2 tbsp coconut flour
– 3 tbsp cacao powder
– pinch of sea salt
– sprinkle of cinnamon
– splash of vanilla
– splash of mint extract
add all ingredients to a food processor except for the coconut oil. blend for a minute. as the blade is running, slowly pour in the coconut oil. once a thick, sticky batter forms, stir through chocolate chips.

roll batter out into a brownie pan, the place in freezer for 2 hours. for the chocolate topping, melt 1/4 cup chocolate chips with 1 tbsp coconut oil in the microwave for 45 seconds. give it a good stir, then pour over bars. place back in fridge to harden.
