set the oven to 350 and grease a loaf pan. in a bowl whisk together: * 2 ripe bananas, mashed
* 1/3 cup melted and cooled coconut oil * 2 eggs
* splash of vanilla
in a separate bowl, whisk together: * 1 1/3 cup almond flour * 1/3 cup oat flour
* 2 tbsp coocnut flour
* pinch of cinnamon * pinch of sea salt * pinch of baking soda
add wet mixture to dry and mix until thoroughly combined. fold in about 1 cup of diced strawberries. pour batter into loaf pan and bake for 50-55 minutes and let cool completely before frosting.
while the loaf is cooking, make the frosting. in a high speed blender add:
– 1 can full fat coconut milk (NOT the liquid, just the solid part)
– 3-4 large strawberries, halved
– 2 tbsp powdered sugar
blend until well-combined. may be a bit runny, this is fine! place in a tupperware and set in the freezer for an hour to thicken (or fridge for 2-3 hours). once thick and the loaf is cooled spread frosting on top!
