A childhood dream.
– 3 tbsp melted vegan butter – 2 tbsp olive oil
– 1/3 cup coconut sugar
– 2 eggs
– 1/2 cup unsweetened almond milk
– 1 cup mashed sweet potato – 1/3 cup cacao powder
– 1/3 cup brown rice flour
– pinch of salt
– splash of vanilla
– pinch of baking powder
set oven to 350 degrees and grease a mini muffin pan. using a hand mixer, beat the wet ingredients together. add dry ingredients on top and beat again until a thick batter forms. using a cookie scoop, drop batter into pan and bake for about 12-15 minutes. let cool for a few minutes before dipping in the glaze.
glaze: – 1/3 cup powdered sugar (i used Lakanto)
– 3 tbsp melted coconut oil
roll each muffin into the glaze and allow to set in fridge before serving
