set oven to 350. in a small bowl make a flax egg (1 tbsp ground flax +2 tbsp water) mix and let set.
while that’s setting, beat together using an electric hand mixer:
– 1/4 cup vegan butter (room temp)
– 1/2 cup coconut sugar
once that’s well combined, add:
– 1 tbsp date molasses
– the flax egg
– splash of vanilla
beat until well mixed. then add:
– 1/2 cup + 2 tbsp oat flour
– sea salt
– pinch of baking powder
– pinch of cinnamon
beat again. then add:
– 1/4 cup gf rolled oats
once the batter is uniform and sticky, drop spoonfuls onto a parchment paper lined cookie sheet. these spread A LOT (we’re going for a thin, sticky, gooey cookie) so make sure there’s room for that. i used two sheets. bake for 8-10 min. take out when you think they look too underdone (this is KEY). if you over cook they’ll burn! i took mine out and let cool COMPLETELY. they’ll set really nicely.
once they’re cooled, ice them! i just combined 1 cup of powdered sugar with 2 tbsp almond milk, mixed to combine, poured over, and put in the fridge to set.
