Vegan Red Velvet Brownies


set oven to 350 and grease a brownie pan. prepare flax egg: in a small bowl, mix 1 tbsp ground flax and 2 tbsp water, let sit for 10 min.

to a food processor add:

* 1 cup steamed beets
* flax egg
* 1/2 cup unsweetened applesauce
* 1/4 cup maple syrup
* 1/4 cup almond milk
* 1/4 cup coconut sugar
* 1/4 cup olive oil
* 1 1/2 cup oat flour
* pinch of baking powder and pinch of sea salt
* 1/3 cup cacao powder
* splash of vanilla extract

blend until a smooth, thick batter forms. stir through chocolate of choice and pour batter into the loaf pan. bake for about 40 minutes and let cool completely. for the icing, i just mixed 1/2 cup powdered sugar, 2 tbsp melted coconut oil and 2 tbsp almond milk together and drizzled over the top.
