Vegan Peanut Butter Marshmallow Cloud Cookies:


set oven to 350. make a flax egg by mixing 1 tbsp ground flax with 2 tbsp water and set to the side.

in another bowl, mix:

– 1/3 cup creamy salted pb (i used @georgiagrinders! code healthfulradiance saves you $!)
– 1/3 cup maple syrup
– splash of vanilla

whisk until well combined, then stir through flax egg once it has gelled.

to the mixture, add:

– 1/2 cup almond flour
– 2 tbsp coconut flour
– pinch of sea salt, cinnamon, baking powder

once a sticky dough forms, stir throw marshmallows of choice. i didn’t measure this, just tossed in a few handfuls and thoroughly combined. drop batter in balls onto a greased cookie sheet and bake for 10-12 minutes. they’ll be super doughy and soft, so make sure to let them cool completely before serving or storing!
