I’ve never been a big cookie person…until these. Now I’m a lil’ cookie monster and I’m 101% okay with it.
1/2 cup runny almond butter
1/2 cup maple syrup
2 tbsp olive oil
1 flax egg (2 tbsp ground flax mixed with 5 tbsp hot water, let sit for ten min)
splash of vanilla
turn over to 350. stir all ingredients until well-combined, then add:
pinch of baking powder
pinch of sea salt
pinch of cinnamon
2/3 cup almond flour
mix until thick sticky batter forms, then stir through chocolate chips. using a cookie scoop, drop batter onto a greased cookie sheet. bake for 12-15 minutes or until golden brown. let cool completely before serving!
