I’m a huge loaf girl, so for me to say this is one of my favorites is a BOLD statement.
Yet I’m standing by it. Let me know if you agree.
in a food processor blend:
- 2 eggs
- 1/4 cup honey
- 1 single serve container of yogurt (i used plain @kitehill vegan greek yogurt)
- 1/4 cup peanut butter
- splash of vanilla
blend until smooth, then add:
- 1.5 cups almond flour
- 2 tbsp coconut flour
- 1/4 cup cacao powder
- pinch of sea salt
- pinch of baking powder
- sprinkle of cinnamon
stir in chocolate chips if adding, then pour into a well-greased loaf pan. bake at 350 for about 30-35 minutes, and let cool completely before slicing.
