Not much I can say about this one…it speaks for itself. More specifically, it’s calling your name! Originally supposed to be a banana bread variation but when I went to retest it we didn’t have any bananas on hand, so this happened instead. Unplanned recipe successes are my favorite, woo!
chocolate chip tahini zucchini bread:
1 cup almond flour
1/4 cup coconut flour
1/2 cup quinoa flour
1/2 cup tahini
3/4 cup maple syrup
1/2 cup grated zucchini
set the oven to 350. grate the zucchini until broken up into fine chunks (i pulsed in a food processor). put the the side. add all ingredients to blender/food processor except for the zucchini and chocolate chips. blend until thick, sticky batter forms. good in zucchini and chocolate chips. add batter to loaf pan and add any extra chocolate to the top. bake for about 40 minutes and let cool completely before serving!
