Lemon Kale Pesto Quinoa White Bean Bake

lemon kale pesto:

– 1/3 cup toasted walnuts (can sub any nuts, and toasting only matters for flavor enhancement) – 3 cups packed kale
– 1/4 cup EVOO
– 1/4 cup lemon juice
– 1 clove garlic
– sea salt

add all ingredients to a food processor and blend until thoroughly combined. i had some quinoa already cooked, so i tossed that with a can of rinsed and drained white beans, then stirred through this pesto. baked in the oven at 400 for 30 minutes!
