Lemon Blueberry Cashew Cheesecake Bites:


in a food processor blend on high:

-1 cup cashews
– 1 cup soft pitted dates

add in:

– 1/4 cup lemon juice
– 1 tbsp chia seeds
– 2 tbsp vanilla protein powder
– pinch of sea salt
– pinch of cinnamon

blend until thick dough ball forms. the mix should be pretty stick and roll up well. remove from processor and place in batter in a bowl. sprinkle a handful or two of dried blueberries on top, the fold into the dough. roll into balls, then place on a parchment paper lined cookie sheet and place in the freezer for at least two hours to set. been enjoying these straight from the freezer!
