Lemon Blueberry Breakfast Muffins

set oven to 350 and line a cupcake pan with liners. in a bowl whisk together the following ingredients: – 1/4 cup melted coconut oil
– 1/2 cup maple syrup
– 3 eggs
– 1/4 cup lemon juice
– splash of vanilla

in a separate bowl, combine dry ingredients: – 1/2 cup coconut flour
– pinch of sea salt
– sprinkle of cinnamon
– pinch of baking powder

add the dry mixture to the wet and stir until thoroughly combined. fold through blueberries and divide batter into liners. bake for about 30-35 minutes
