Allllll winter long. And every other season for that matter. And I KNOW, quinoa is technically *not* a grain, but use this bowl as inspiration for other bowls (swap for brown rice, for example)!
avocado pea dip:
1 bag frozen peas (boil and drain)
2 large ripe avocados
2 tablespoons olive oil
splash of acv
blend until well mixed!
to assemble: start with a base of greens, then add roasted sweet potato wedges, steamed quniona, cherry tomatoes, and a hearty dollop of dip!
