Raw Peanut Butter Caramel Brownie Bars

Sometimes my recipes are a little more intricate than throwing everything into a food processor and blending. But I promise they’re worth it. Because these…oof.

brownie layer:

1 cup raw almonds
1 cup raw pecans
1/4 cup cacao powder
1 cup soft pitted dates
vanilla
sea salt

blend until a dense sticky dough forms. knead into a parchment paper lined brownie pan.

peanut butter caramel layer

1/2 cup peanut butter
1/2 cup olive oil
1/2 cup maple syrup

whisk until well combined then pour over brownie base. put in freezer to set for at least an hour.

chocolate layer

1/2 cup chocolate chips/chunks or 1 broken up chocolate bar
2 tablespoons olive oil

melt in the microwave for a minute then whisk until smooth. pour over peanut butter layer and let set in freezer overnight!
