Grain-free Mini Banana Nut Muffins

Like the Entemanns Lil’ Bites we all grew up with, but better…just a bit better.

Grain-free Mini Banana Nut Muffins

  • 1 cup quinoa flour
  • 1/2 cup almond flour
  • 2 tablespoons coconut flour
  • 2 eggs
  • 1 ripe banana
  • 1/2 cup sunflower seed butter
  • 1/2 cup maple syrup
  • sea salt
  • vanilla
  • pinch of baking soda
  • chocolate chips
  • chopped walnuts
  • sunflower seeds

Heat oven to 350 and grease a mini cupcake pan. Add all ingredients to a food processor except for the chocolate chips, walnuts, and sunflower seeds. Blend until completely smooth and runny, then fold in the above three mix-ins. Distribute batter to the pan and top extra chocolate, nuts, and seeds. Bake for about 12-15 minutes until golden brown!
